#71. Learn to Cook 10 New Meals

#3. Baked Potato Soup

Baked Potato Soup is probably one of my favorite foods ever, but it can be so bad for you.  My favorite kinds are usually high in calories and made with heavy cream.  One day, on Pinterest, I came across this recipe, and I could hardly contain myself.  Baked Potato Soup!  Made in the Crockpot! Oh Happy Day!

A few days later, I was making this for dinner.  The recipe yields a lot of soup, so we had this for dinner for a couple of days, plus I froze about half the batch.  Not sure if it freezes well, but we'll find out.

The best part about this recipe is that it isn't made with heavy cream.  I used reduced fat cream cheese, so it is relatively guilt free!  It's a perfect hearty soup for a cold winter day!  This will probably be a regular winter meal here in the Magdalen household.

Baked Potato Soup topped with cheddar cheese and real bacon, YUM!
