#71. Learn to cook 10 new meals

Writing this "post-Oprah" blog is almost dull for me.  Learning to make a delicious new meal is exciting, but not quite "sitting in the front row & winning lots of fun gifts at the Oprah Show" exciting.  Alas, I am not a quitter and no matter the excitement level, each of these goals is important to me for a reason. With that, here's what's cookin'...

Last night's dinner was another new meal for us.   It is my second time making it and it's a keeper.  I've decided that I haven't really learned to cook the meal unless it's been tried at least twice with favorable results. I got this recipe from my parent's friend Scott, who is a very creative & gourmet chef!   This particular recipe is easier than easy, and makes me feel fancy when I make it.  The flavor is amazing, and it's pretty hard to wreck.  Even if you're not a die-hard salmon lover, there's a chance you'll like this.  The sauce mixture would be good on other types of fish as well!

Last night I paired this with rice pilaf, which makes for some bland colors on your plate, but the flavors go great together!  Spice up the look of your plate with a yummy vegetable or colorful green salad.  I'd take suggestions on other sides to make with this dish too, in other words, I don't hate blog comments. :)  I almost always do Salmon & Rice together... to me, that combo is like Peanut Butter & Jelly, but I'm game for mixin' it up!

salmon with dijon sour cream
1lb Salmon Fillet
3/4 cup of Light Sour Cream
1 tbsp Dijon Mustard
2 tbsp Lemon Juice
Salt & Pepper

Pre-heat oven to 350 degrees.  Place Salmon fillet in a glass baking dish.  In a separate bowl, mix sour cream, mustard and lemon juice together.  Spread mixture 1/4" thick over the entire fillet.  


Bake for 25 minutes.  At the last minute, you can turn on the broiler to brown a little, but be careful not to burn.  Salt and Pepper to taste.
